The Farmers’ Market on the Terrace  
Back at Souk Al Bahar
You must know your growers to know your food. On Friday 10th December, don’t miss the opportunity to meet local farmers and farm hands at the Farmers’ Market on the Terrace, from 9 am to 6 pm. Join us on the terrace outside Souk Al Bahar’s Baker & Spice.
 
 
Now Open  
From 12th November onwards, Baker & Spice has a new Central Kitchen Shop & Café in Dukkan Al Manzil, Downtown Dubai. Our new kitchen and bakery allows us to introduce a new range of exciting artisan sourdough breads and lots of new wonderful food and cakes, as well as a new party catering service. The little café will become the new centre point for the hood.

Baby leaves
For the first time in the UAE, B&S Dubai is now serving a selection of locally grown baby salad leaves. Our chosen mix – especially grown for us – at the moment includes red oakleaf lettuce, Boston butterhead lettuce, local rocket, pak choi, bull’s blood and red chard. The mix will grow and change with the seasons and availability.

We are eagerly waiting to see and to taste the first baby spinach when it arrives in our kitchen shortly.

Our supplier is Salata Farms in Ras al Khaimah, and this is the first time this product is available home grown in the UAE.

No Recipe Required  
Slow-roasted tomato, aubergine and feta salad
Cut some local tomatoes in half, add salt and olive oil and roast them in the oven on the very lowest setting (50C) overnight. Slice some aubergines, add salt, pepper and olive oil and roast in a hot oven (200C) for 10 minutes. Mix together, sprinkle over some feta and serve on a bed of rocket.

When shopping in the markets for your fresh fruits and vegetables, ask about the origins of your purchases. Remember how you feel after a long flight? Well, imagine how a strawberry would be after a minimum 24-hour journey.

Know Your Food

Baker & Spice is proud to source its eggs from Nazwa Organic Farm in Hatta.
White mulberry
Organic white mulberry (white tut) is harvested from the trees at Mazaraa Farm as we speak. These trees are young and this is the first crop they are giving. This is an Afghan variety. The fruit is very long and very sweet. You would normally find this fruit in its dry form in local shops and we recommend using it in your muesli. Fresh tut is very sweet with a honeyed note. At B&S Dubai we are hurriedly turning it into a jam, with very little added sugar and a drop of lemon juice. This jam will be officially launched together with our afternoon tea menu this week.
